HOS 355 - Advanced Lodging Management


Units: 3
Simulated management of a full-service hotel and other lodging facilities, including revenue management, group sales, marketing, public relations, and customer service.

Strongly Recommended Preparation: HOS 100, REC 100 and HOS 200.
Possible Instructional Methods: Entirely On-ground, or Entirely Online.
Grading: A-F grading only.

Student Learning Outcomes - Upon successful completion of this course students will be able to:
  1. Describe how supply and demand influences the price of hotel rooms
  2. Successfully mix group business and transient business to meet a profit goal
  3. Use marketing programs, within a budget, to meet revenue and occupancy goals
  4. Make critical judgments on customer service matters
  5. Discuss the proper handling of “walking” a guest, property management systems and the information they provide
  6. List common surprises or special circumstances that front desk staff must handle
  7. Use social media feedback to increase customer satisfaction ratings at a hotel
  8. Read external market research reports, including pie charts, line graphs, and histograms
  9. Plan appropriate menu offerings for a restaurant and price menu items to sell
  10. Analyze the financial results and impact of a restaurant within a hotel
  11. Plan the timing of staffing and activities to meet meeting schedules
  12. Respond to guest satisfaction issues and improve banquet and meeting service
  13. Plan housekeeping staffing to make sure that rooms are ready for incoming guests
  14. Evaluate available supplies and reorder inventory to ensure adequate levels of supplies
  15. Based on financial data, take action to decrease expenses and increase profit at a hotel
  16. Take actions at their hotel to improve competitive positioning
